How To Cook It At Home

Ingredients:

Filet

  • 2 Lbs. Imperial American Wagyu Filet

Filet Marinade

  • ½ T. Five Spice
  • 1 Tsp Sesame Oil
  • 1 T. Soy Sauce
  • 1 T. Hoisin Sauce
  • 3 Cloves Garlic, Smashed
  • 1 T. Shaoxing Wine (Or Dry Sherry)
  • ¼ Cup Brown Sugar

Char Siu Sauce

  • ½ Cup Water
  • 4 T. Hoisin
  • 2 T. Soy Sauce
  • 3 Cloves Garlic, Minced
  • 1 Tsp Five Spice
  • ½ Cup Rice Wine Vinegar
  • ½ Cup Brown Sugar
  • ¼ Cup Honey
  • 1 T. Cornstarch

Broccoli Potato Mash

  • 1 Idaho Potato, Washed, Peeled, Cut Into Large Rounds
  • 6 Cups Broccoli Florets
  • 2 Cups Spinach
  • 1 T. Ginger, Minced
  • 6 T. Cold Butter
  • Salt And Pepper, To Taste

Creamed Horseradish

  • ½ Cup Sour Cream
  • ½ Cup Mayonnaise
  • 1½ T. Horseradish
  • 1 Lemon, Juiced
  • Salt And Pepper, To Taste

Instructions:

Make The Filet Marinade

  1. Whisk all marinade ingredients together.
  2. Add the filets and toss to coat.
  3. Marinate for at least 4 hours, or overnight, covered in the refrigerator.

Make The Char Siu Sauce

  1. Place all ingredients in a small pot and bring to a boil.
  2. Reduce heat and simmer until it starts to thicken and slightly reduce, becoming darker in color.
  3. Remove from heat and adjust seasoning if needed.

Make The Broccoli Potato Mash

  1. Bring a pot of water to a boil and cook the potato until almost fork tender.
  2. Add the broccoli florets and cook until just fork tender.
  3. Remove the potato and broccoli with a sieve.
  4. Reserve 2 cups of broccoli florets and shock in ice water to stop the cooking.
  5. Place the warm broccoli and potato mixture into a food processor.
  6. Add the spinach and ginger.
  7. Process until smooth, scraping down the sides as needed.
  8. As the food processor runs, add the cold butter.
  9. Season with salt and cracked black pepper.
  10. Transfer to a pot, cover, and reheat when ready to serve.

Make The Creamed Horseradish

  1. Whisk sour cream, mayonnaise, horseradish, and lemon juice together in a bowl. Season with salt and pepper to taste.
  2. Refrigerate until ready to serve.

Cook The Filet

  1. Remove the filet from the marinade and let it come to room temperature for 15 minutes before cooking.
  2. Preheat the oven to 400°F.
  3. Heat a cast iron pan over high heat.
  4. Add sesame oil to the pan.
  5. Season the steaks lightly with salt and pepper.
  6. Sear each side for 2 minutes without moving the steaks.
  7. Transfer to a parchment-lined sheet tray fitted with a roasting rack.
  8. Spoon some Char Siu Sauce over the filets to coat.
  9. Roast for 3–4 minutes, or until the internal temperature reaches 120–125°F for medium-rare.
  10. Remove from the oven and rest for 3–5 minutes before slicing.
  11. Season the reserved blanched broccoli with salt and pepper and warm in the oven for serving.
  12. Serve with the Broccoli Potato Mash, a dollop of Creamed Horseradish on top of the filet and additional horseradish on the side.
  13. Spoon additional Char Siu Sauce over the filet before serving.
