Ingredients

Wagyu Cali Burger

5 kaiser rolls
5 formed Imperial American Wagyu Burger patties
1 container sprouts
1 large hot house tomato (sliced)
1 pound bacon
½ pound shredded aged cheddar cheese
Avocado mayo

Burger Patties

1½ pounds Ground Wagyu Beef
2 tablespoons barbecue sauce
1 teaspoon salt
½ teaspoon black pepper
1 egg (beaten)
½ cup plain breadcrumbs
2 teaspoons minced garlic
1 teaspoon granulated onion

Avocado Mayo

¾ cup mayo
2 tablespoons mirin
2 tablespoons fresh lime juice
1 avocado
½ teaspoon salt

Directions:

  1. To form the patties, mix all ingredients in mixing bowl until well incorporated.
  2. Divide mix into 5 equal patties and store in fridge until ready to cook.
  3. To make the avocado mayo, place all ingredients in blender and puree until smooth.
  4. Store in air-tight container in fridge until needed.
  5. Mayo will hold in cooler for 4-5 days.
  6. To assemble the burgers, toast buns on both sides in large cast-iron skillet and store in warm place until needed.
  7. Cook bacon in same skillet and set aside until needed, reserving bacon drippings to cook burger.
  8. Place burger patties in same skillet with reserved bacon fat and cook over medium heat.
  9. Cook patties for 3-4 minutes on first side and flip when browned.
  10. Top each patty with a generous amount of cheese and allow to cook for an additional 3-4 minutes or until cooked to an internal temperature of 160F.
  11. Spread avocado mayo on each side of toasted bun.
  12. Place burger patty on bottom bun and top with bacon, tomato, and sprouts.
  13. Finish with top bun and plenty of napkins and enjoy.
