Flank Steak Salad with Fresh Strawberries and Balsamic Honey Dressing

Ingredients

2 lbs Imperial American Wagyu Flank Steak

To make marinade:

1/3 cup extra virgin olive oil
2 cloves garlic, minced
1 tablespoon dried thyme
2 tablespoons red wine vinegar
1/3 cup low sodium soy sauce
Salt & pepper to taste
4 handfuls of spring mix salad
1 cup sliced fresh strawberries
½ cup raw pecans or coated pecans

To make dressing:

¼ cup balsamic vinegar
2 tablespoons honey
½ cup olive oil

Directions

  1. To make the Flank steak marinade, combine all the marinade ingredients in a bowl.
  2. Place flank steak in the bowl and completely coat with the marinade.
  3. Chill and marinate for at least 4 hours or up to overnight.
  4. Prepare your grill or skillet to medium-high heat.
  5. Remove the flank steak from the marinade and gently blot off the excess marinade from the steak with a paper towel.
  6. Sprinkle coarse salt and freshly ground pepper generously on all sides. The salt and pepper will help form a savory crust on the steak.
  7. Place steak on the grill or skillet.
  8. Grill for 3 to 4 min on each side to get a good crust, then move the steak to the side to rest while you make the salad. Per the USDA, the internal temperature of the steak should rise to 145 degrees F, or your preferred doneness.
  9. Divide spring mix between 4 salad plates and top each with strawberries, and pecans.
  10. Thinly slice flank steak against the grain and place on each salad.
  11. To make the dressing, stir the balsamic vinegar and honey together in a bowl; slowly stream the olive oil into the mixture while whisking continuously. Season with salt and pepper, then drizzle the dressing over the flank steak salad just before serving.
